Spinach with Sesame Dressing


If you are looking for a quick side dish, look no further! This is officially the recipe with the shortest cooking time on this entire blog.

Let's play a guessing game. Look at this beautiful spinach with sesame dressing, adapted from a recipe by Donna Hay. How long do you think the spinach is cooked for?


The recipe as written in Hay's book, Modern Classics 1, calls for the spinach to be blanched for 5 seconds! Yes, five seconds of total cooking time in this entire recipe! I looked away and think that I actually cooked it for closer to 10 seconds - oops.

I adapted the dressing recipe because I am living in temporary housing at the moment with a very simple kitchen. The dressing was meant to be smoothly blended but I just mixed together some toasted sesame seeds, vinegar, and soy sauce. Simple and delicious! And fast. The whole dish came together in literally one minute.
